  • The thing that makes this soup more flavorful than most vegetable soups is using the V-8 juice. It is my favorite soup when the leaves begin to fall and it is so healthy too!

Instructions

  1. In a Dutch oven, sauté the carrots, onions, celery and green pepperin oil until crisp-tender. Add garlic; cook 1 minute longer.
  2. Stir in the remaining ingredients. Bring to a boil. Reduce heat then cover and simmer for 1 to 1-1/2 hours or until vegetables are tender. Discard bay leaf.
