Most stews become mushy when cooked. This is a stew that will not be mushy because you braise the meat with onions first in red wine and beef broth until a rich sauce develops. Then after an hour you add the rest of the vegetables and all the ingredients are perfectly cooked with an amazing flavor.
The thing that makes this soup more flavorful than most vegetable soups is using the V-8 juice. It is my favorite soup when the leaves begin to fall and it is so healthy too!
